The Standard of Raw Ontario Honey

Our unpasteurized honey is cold-extracted to preserve the delicate natural enzymes and pollen that commercial heat-processing destroys. We follow a strict small-batch harvest philosophy at our King City apiary, ensuring every jar meets the Ontario No. 1 Grade—the highest designation for purity and moisture content in Canada.

Step One: Seasonal Wildflower Harvest

Seasonally gathered from wildflower blooms across King City, Ontario, our honey is harvested only when the nectar flow peaks and the bees have capped the comb. This single-origin approach captures the true terroir of the region, signaling that the honey has reached its ideal moisture content and flavour maturity.

Step Two: Natural Settling & Extraction

After extraction, the honey is allowed to rest naturally. We never heat it above hive temperature and we never force it through fine filters. Instead, we gently strain it to remove wax particles, allowing the beneficial enzymes and local pollen to remain exactly as they were in the comb. The honey decides when it is ready.

Step Three: Small-Batch Jarring

When the honey has settled, we bottle it in limited runs with zero additives. No blends, no sweeteners, and no preservatives. Each jar is filled and inspected individually at our Ontario facility, ensuring you receive 100% pure Ontario Grade 1 honey directly from our farm.

What Grade 1 Means

Ontario No. 1 Grade is awarded based on colour clarity, low moisture content, and flavour purity. Consistently meeting this standard is our promise to you. It is not just a marketing label; it is a certified benchmark of excellence in Canadian apiculture.

For us, "raw" means our honey is never heated above 37°C (hive temperature) and is always unfiltered. This ensures the health properties of the honey remain intact, providing you with a functional superfood that tastes as honest as the day it was gathered.
